The TerroirThe cellar is designed for the production of wines of terroir and excellence . Everything has been imaginated for a craft production, hand-made directly by Niccolò and Enrico .
The Chioccioli Estate has its own winery in Gaiole in Chianti and its vineyards are located in two areas with the most suitable terroir in the Chianti Classico area: Gaiole in Chianti and Quercegrossa.
The soils are medium clay and rich in texture of limestone and marl, are poor and stony soils, rich in carbonates, where the vine finds the highest expression of quality.
The vineyards have a density of 5.000 vines per hectar trained with horizontal spurred cordon and guyot systems.
All operations are hand-made : Niccolò and Enrico Chioccioli Altadonna work directly in the vineyard operating the pruning, suckering, the scacchiatura, tying green, green harvesting and the harvest.
Great attention is dedicated to all the details of the wine-growing management with the aim of achieving the best polyphenolic ripening of the grapes.
The yield per hectare is low, typically produce an average of 30 hectoliters of wine per hectar.
Every detail has been chosen on the basis of quality starting from the double sorting table of grapes , the vinification technique, the elevation of the wines in the best selections of fine-grained French oak. All aimed at achieving the highest expression of territorial identity of wines.
